This is a snack that works well for either office parties, of the “bring a dish” variety, a New Years Eve or Birthday party finger food, or just a movie night snack for your family. I actually got this recipe from a former boss of mine. She brought these to celebratory office functions involving food on many occasions. At last, I asked and she gave me this very simple, yet tasty recipe. I added my own twist to it, and it is still a winner with my family and party guests!
What You’ll Need:
- 10 Burrito Size Tortillas (Corn or Flour)
- 8oz Cream Cheese (softened)
- 1 Can of White Meat Chicken
- 1/2 envelope Taco Seasoning
- 1/2 Cup Real Bacon Bits
- 1 Cup Shredded Taco Blend Cheese
In a mixing bowl, remove chicken from can and shred with a fork. Next, add cream cheese and taco seasoning and stir until blended thoroughly. One at a time, take tortillas and lightly spread cream cheese mixture as evenly as possible. Lightly sprinkle bacon bits and grated cheese, and roll into burrito-like rolls. Wrap in plastic wrap and chill for one hour, then cut into quarter inch slices, garnish with chopped fresh chives and serve.
